Trying new things is a big part of the Sydney Royal Easter Show experience, and this year proved to be no different with bugs being on offer by the Edible Bug Shop at the Woolworths Pavilion. Skye Blackburn, an Entomologist and Food scientist, first established the Edible Bug Shop in 2007 while following her passion for researching sustainable food practices. Beginning as one of Australia’s first insect protein farmers, Skye is now a world leader in Edible Insect farming techniques.

Skye’s passion for insect nutrition is infectious and her work researching this area of food sustainability sees her routinely doing the rounds at secondary and primary schools Australia-wide. Not all insects are edible however, and Skye believes that educating the public about the safe consumption of Edible Insects is an important ant consideration for those game enough to try this diet out. The benefits include a plentiful food source that is not only rich in protein, but also in vitamins and fatty acids such as Omega 3. Skye has lovingly put together a wide range of insect-based foods that are all packed with nutrients and full of the good stuff like calcium, iron and amino acids too.
