The Sydney Royal Easter Show Aquaculture competition was on today as 15 different judges tasted both prawns and oysters from across our regions.

This morning, we had a look around the Fine Food section witihin the Woolworths Fresh Food Dome where the competition took place.

The rock oysters came from farmers across NSW and the Black Tiger Prawns were brought in from farms along the coast of QLD, as well as Northern NSW.

Points are based on the balance of flavour and texture and judges are brought in from across the seafood supply chain- from chefs to scientists and retailers.

Check out the chat Mornings announcer Angela had with head judge John Susman ahead of the competition this morning.

Enjoy a nice raw rock oyster and dash a bit of lemon over the top!
